Grilles plantain are one of my favorite foods here. Considered a snack, the whole plantain is roasted on a barbecue and then either served whole or, like this one, stuffed. Most Dominicans prefer then less ripe and more starchy but I personally go for them slightly ripe and sweeter.
The stuffing in this one is codfish, another staple food. I’m still not a big fan of the salted codfish and when it was presented to me at breakfast on several occasions made me rather green. But stuffed in a plantain with a little ketchup and hot sauce on top it’s not so bad.
