Living on a Caribbean island, as I do, outdoor living is par for the course. Barbecues, wood fires and coal pots are a staple cooking method. Barbecues are mainly used to for chicken, corn and plantain and occasionally other meats such are ribs and rabbit. No community or event is complete without its barbecue though eating a chicken leg in public is an art, especially when there is sauce involved. When I first arrived I used to hide in a corner to eat, but now I just do the best I can… and forgo the sauce!
This picture was taken not long after I first came to Capuchin, in 2007. Jerry decided to barbecue some of his rabbits… it was quite a memorable night!
