Chicken plucking

A lot of people in Dominica still cook on open air wood fires, especially when gas is expensive or unavailable. It’s also done for special occasions. In this picture, Mr. Evered is plucking chickens in preparation of making food following an activity at Cana Heritage Park, in Capuchin. These chickens has been freshly killed then dunked in boiling water and then plucked.

Mr. Evered is known as a good plucker and has been doing this all his life. He was sitting outside one of the houses in Capuchin and I captured him on my way to the event.
